WINE MAKING PROCESS
The grapes of the individual plots cultivated with Ciliegiolo are harvested manually by carrying out two different steps. In the first step, the grapes are harvested for rosé.The second step, takes place ten days’ later – the grapes are now more matureand are harvested for Sileno. The grapes are vinified and refined separately followinga wine-making process that varies according to the climate of that particular year. The fermentation takes place with indigenous yeasts and is carried out at a controlled temperature.
In oak barrels for 6/8 months for half of the wine, in cement for 6/8 months for the other half. In the bottle for 6 months.
This wine is obtained from the Ciliegiolo grapes of the individual plots where, every year depending on the climatic conditions, the vine gives the best of itself. The assemblage produces a single grape variety wine with an intense ruby color, with aromas of ripe fruits (particularly cherry and strawberry cherry), and sweet tannins. It has an excellent structure and is extremely pleasurable on the palate.
