WINE MAKING PROCESS
The grapes of the individual plots cultivated with Cabernet franc and located in the Campo SanGiovanni and Riserva plots are harvested manually, then fermented and aged separately. Theaverage grape production per plant is 600 g. The winemaking process varies according to theclimate of that particular year. The fermentation takes place with indigenous yeasts and iscarried out at a controlled temperature.
10 months in oak barriques. 8 months in the bottle.
The mono-variety assemblage creates an intense ruby-red wine with notes of tobacco,chocolate and ripe fruit. The palate is rich and elegant with sweet tannins, well balanced andextremely pleasing. This wine is tasty and persistent and fully expresses the potential of theterroir where the vines are cultivated.
